Kelp Noodle & Wakame Salad (Yum Wun Sen Wakame)
Ingredients
- - 150 g. kelp noodles
- - 300 g. fresh shrimp
- - 1 Vietnamese pork sausage (Moo Yor), cut into bite-sized pieces
- - 3 tablespoons ground pork
- - 3 stalks spring onions, cut into short sections
- - 2 stalks of coriander, roughly chopped
- - 1 onion, thinly sliced
- - 5 tomatoes, cut into wedges
- - 6 fresh chilies, finely chopped
- - ½ tablespoon sugar
- - 2 limes
- - 4 tablespoons fish sauce
- - 10 g. dried wakame
Instructions
1. Prepare ingredients
Soak dried wakame in room-temperature water for 5–10 minutes until softened. Drain and slice into bite-sized pieces. Wash all vegetables thoroughly and chop as listed.
2. Prepare Kelp noodles
Rinse Kelp noodles with clean drinking water twice. Blanch in boiling water for about 1 minute, then drain and set aside.
3. Prepare proteins
Blanch shrimp, Vietnamese pork sausage, and ground pork until cooked. Drain and set aside.
4. Make dressing
Mix lime juice, fish sauce, sugar, and chopped chilies. Stir well, taste, and adjust for balanced sour-salty-sweet flavor.
5. Toss and serve
Combine kelp noodles, wakame, proteins, and all vegetables in a mixing bowl. Pour dressing over, toss thoroughly, plate, and serve immediately.
