Kelp Noodle Stir-Fry (Pad Cha)
Ingredients
- - Kelp noodles — approx. 50 g
- - Squid or shrimp — approx. 50 g (add according to preference)
- - Thai basil leaves
- - Sliced Fingerroot (Krachai)
- - Fresh Green Peppercorns
- - Sliced Fresh red chili
- -Vegetable oil
Instructions
1. Blanch the kelp noodles in boiling water for about 12 minutes until tender. Drain well and set aside.
2. Heat oil in a wok over medium heat. Add the squid and shrimp, then stir-fry until partially cooked. Then add the sliced fingerroot, fresh green peppercorns, and pad cha curry paste. Stir-fry until fragrant and well combined.
3. Add the Thai basil leaves and the blanched kelp noodles, then toss everything together until evenly mixed.
4. Season to taste and transfer to a serving plate.
5. Garnish with fresh red chili slices for an attractive presentation.
